The mainly Callet grapes are harvested from the oldest vines from many small vineyards in the sub-region of central Mallorca called "Son Negre" -- the Dark Place (because the intense sunlight almost bakes the soil with its heat). 17 months of aging in French oak barrels results in a voluptuous wine with intensified aromatics, ripeness, fullness, complexity, and length – and yet, amazingly, with a firm acidic structure.
